Ingredients
- Eggplants - 1 piece
- Tomatoes - 2 pieces
- Garlic - 1 clove
- Ocean salt - to taste
- Natural Yogurt - 3.5 oz
- White Balsamic Cream - to taste
- Herbes de Provence - to taste
Step by Step guide
Step 1
Slice the eggplant and tomatoes into rounds about 7 mm thick.
Step 2
Heat a non-stick skillet with a thick bottom, fry the salted eggplant on both sides until browned, then do the same with the tomatoes (literally 20 seconds on each side).
Step 3
Mix the yogurt with the crushed garlic — the sauce is ready, now we start assembling the towers.
Step 4
An eggplant round, sauce, tomato, Herbs de Provence. In this order, create a tower with two layers, finishing with eggplant topped with sauce, and drizzle with balsamic topping.
