Description
The most affordable caviar is vegetable caviar. You can buy it ready-made at the store or make it at home. Here we show you how to make eggplant caviar.
Ingredients
- Eggplants - 17.6 oz
- Carrot - 1 piece
- Onion - 1 head
- Orange Bell Peppers - 1 piece
- Tomatoes - 7.1 oz
- Vegetable Oil - 3 fl oz
- Passata Tomato Sauce - 2.5 oz
- Water - 5 fl oz
- Garlic - 1 clove
- Salt - 1 tablespoon
- Sugar - 1 tablespoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dice the eggplants, sprinkle with salt, and mix well. Let them sit for half an hour, then squeeze out the excess moisture.
Step 2
Let it rest for half an hour. Then, squeeze it out.
Step 3
Dice the onion into small cubes.
Step 4
Also, slice the bell pepper.
Step 5
Dice the tomatoes into small cubes.
Step 6
Grate the carrot using a coarse grater.
Step 7
In a skillet, heat half of the oil and sauté the eggplants for 10–15 minutes, stirring occasionally.
Step 8
Meanwhile, in another skillet, sauté the onions until they are softened, then add the carrots and bell peppers, stirring and cooking for 10 minutes. After that, add the tomatoes and cook for an additional 5 minutes.
Step 9
Combine the vegetables. Pour water into the tomato paste, mix well, and add it to the vegetables. Season with salt, pepper, and add sugar.
Step 10
Simmer on low heat for 30 minutes. A couple of minutes before the end, add the minced garlic. Transfer the hot caviar to sterilized jars and allow to cool completely.
