Description
You can dress the caviar with vegetable oil, but it's not necessary; lemon juice is sufficient.
Ingredients
- Eggplants - 1 piece
- Tomatoes - 1 piece
- Spanish onions - ½ heads
- Lemon - 1 piece
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut a large eggplant and roast it for ten minutes. Ideally, do this over an open flame, but it can also be done in the oven or even in the microwave.
Step 2
The flesh of the eggplant is scooped out and finely chopped with a knife at high speed (never put it through a meat grinder). The speed is somehow important. A fresh, large tomato is cut up along with the skin and mashed into a puree.
Step 3
Finely chop half of a sweet onion.
Step 4
Mix everything together, add lemon juice, and be sure to include coarse salt and pepper.
