Ingredients
- Eggplant - 1 piece
- Pink Tomatoes - 2.5 oz
- Garlic - 1 clove
- Cream Cheese - 1.4 oz
- Tarragon - 3 sprigs
- Salt - 0 oz
- Olive Oil - 0 fl oz
- Soy Sauce - 0 fl oz
Step by Step guide
Step 1
Fry the whole eggplant with the skin in hot oil, cool it down, peel it, and chop finely, adding salt to taste.
Step 2
Blanch the tomatoes in boiling water for 30 seconds, then transfer them immediately to ice water, peel the skin, chop the flesh finely, and mix it with the minced garlic.
Step 3
Remove the leaves from one sprig of tarragon, chop them, and mix with the cream cheese.
Step 4
For the dressing, mix the olive oil and soy sauce.
Step 5
On a plate, layer the eggplant, top with tomatoes, then the cream cheese with tarragon, drizzle with the dressing, and garnish with tarragon leaves on top.
