Ingredients
- Eggplants - 2 lbs
- Walnuts - 3.5 oz
- Cilantro - 3.5 oz
- Garlic - 3 cloves
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - to taste
- Pomegranate Seeds - to taste
- Thick Armenian cottage cheese - 3.5 oz
Step by Step guide
Step 1
Slice the eggplants lengthwise into thin strips.
Step 2
Heat a skillet and fry the eggplant in vegetable oil on both sides.
Step 3
Place the cooked eggplants on paper towels to remove excess oil.
Step 4
Prepare the filling. For this, you will need thick Armenian cottage cheese. Finely chop the walnuts and cilantro and add them to the cottage cheese.
Step 5
Grate the garlic, add it to the thick cottage cheese, and mix thoroughly.
Step 6
Add salt and pepper, and mix again.
Step 7
Place a little filling at the edge of an eggplant strip and roll it up.
Step 8
Repeat the same with the other slices.
Step 9
Arrange the rolls on a plate.
Step 10
Garnish with crushed walnuts and pomegranate seeds and serve.
