Ingredients
- Eggplants - 2 pieces
- Tomatoes - 2 pieces
- Olive Oil - 1 tablespoon
- Feta cheese - 4.2 oz
- Parsley - 1 bunch
- Walnuts - 2.5 oz
Step by Step guide
Step 1
Slice the eggplants lengthwise into pieces about 4–5 mm thick.
Step 2
Heat a skillet with vegetable oil. Add the eggplants and fry in 2 batches for 2 minutes on each side until cooked through.
Step 3
Transfer to paper towels to absorb excess fat.
Step 4
Remove the seeds from the tomatoes and cut the flesh into thick strips.
Step 5
Place the feta, olive oil, and herbs in a blender bowl. Blend until it reaches a paste-like consistency.
Step 6
On each slice of eggplant, place 1 teaspoon of feta, a piece of tomato, and half a walnut.
Step 7
Roll them up into rolls.
