Ingredients

  • Salt - to taste
  • Parsley - 3 sprigs
  • Garlic - 1 clove
  • Safflower Oil - 17 fl oz
  • Eggplants - 26.5 oz

Step by Step guide

Step 1

Peel the eggplants and cut them into slices 2 cm thick. Place the slices in a colander, sprinkle with salt, and let sit for an hour. Then rinse and pat dry.

Step 2

Heat the oil in a large skillet, add the slices, stir, cover, and cook over low heat for 20 minutes until soft. Drain excess oil, leaving just enough to prevent the eggplants from sticking together.

Step 3

Sprinkle with finely chopped parsley and garlic, and add salt. Increase the heat to medium and cook for a few more minutes, shaking the skillet. Serve immediately. This side dish pairs well with meat.
