Eggplant Towers with Feta
Ingredients
- Eggplants - 2 pieces
- Carrot - 1 piece
- Onion - 1 piece
- Garlic - 1 clove
- Mild Chili Spice - ½ piece
- Feta cheese - 3.5 oz
- Vegetable Oil - 1 tablespoon
- Young zucchini - 1 piece
- Thyme - 1 sprig
- Sun-Dried Tomatoes - 1 piece
Step by Step guide
Step 1
Cut the eggplants into thick slices, salt them, and let sit for 15 minutes.
Step 2
Peel the carrot and grate it on a coarse grater.
Step 3
Cut the zucchini into cubes.
Step 4
Finely chop the onion, garlic, and chili pepper.
Step 5
Chop the sun-dried tomatoes.
Step 6
Chop the thyme.
Step 7
Cut the feta cheese into small cubes.
Step 8
Rinse the eggplant slices, gently squeeze out excess water, and dry with a paper towel.
Step 9
Fry in vegetable oil, then remove from the pan.
Step 10
In the remaining oil, sauté all the prepared vegetables.
Step 11
Let cool and mix with the feta cheese.
Step 12
Assemble low towers using the eggplant slices, alternating with the filling.
Step 13
Garnish with sprigs of any herbs and serve immediately.
