- Chicken Egg - 1 piece
- Butter - 8.5 oz
- Meyer Lemon Juice - 6 teaspoons
- Water - 4 teaspoons
- White bread - 6 pieces
- Ham - 6 pieces
- Salt - 3 teaspoons
- Ground Black Pepper - to taste
- Herbs - 3 bunches
- Vinegar essence - to taste

Step 1
First, let's prepare the hollandaise sauce. To do this, mix the egg yolk, lemon juice, and water. Place it over a water bath. It is important to ensure that the heat is low; if the water boils vigorously, the eggs may curdle.

Cut the chilled butter into small cubes. Add them one by one to the yolk mixture while constantly stirring. As soon as one piece of butter melts, add the next one. Continue until all the butter is used.

Season the finished sauce with salt and pepper to taste and set it aside for now.

Now we need to poach the egg. Bring a liter of water to a boil, add 1 teaspoon of salt and 4 teaspoons of vinegar, and reduce the heat so that it barely simmers. Crack the eggs one by one into a bowl, making sure to keep the yolk intact. In the hot water, use a spoon to create a whirlpool and gently lower the egg into it by tilting the bowl. Cook for exactly three minutes. Repeat this with the second egg.
