Ingredients
- Onion - 2 heads
- Olive Oil - 4 tablespoons
- Garlic - 2 cloves
- Ground Cumin - ¾ teaspoon
- Ground coriander - ¾ teaspoon
- Lentils - 5.3 oz
- Chicken Broth - 1½ liters
- Lemon - ½ piece
Step by Step guide
Step 1
Finely chop one onion and slice the other into thin rings. In a pot, heat 2 tablespoons of olive oil and sauté the chopped onion until soft. Add the minced garlic, cumin, and coriander. Sauté briefly until fragrant, then add the lentils and broth. Bring to a boil, reduce the heat, and simmer for 30-40 minutes until the lentils are soft.
Step 2
Heat the remaining oil in a pan and add the sliced onion. Cover and cook for 10-15 minutes until soft, then increase the heat and sauté for a bit longer until golden and caramelized.
Step 3
Season the soup with salt and pepper and add water as needed (the consistency should be similar to light cream). Add lemon juice, ladle into bowls, and top with caramelized onions.
