Eye Round Tartare with Egg Yolk

Ingredients

  • Eye muscle - 14.1 oz
  • Parsley - 1 sprig
  • Gherkins - 0.4 oz
  • Spanish onions - 0.4 oz
  • Whole egg - 4 pieces
  • Vegetable Oil - 1 fl oz
  • Ketchup - 1.8 oz
  • TABASCO® - to taste
  • Worcestershire Sauce - 0 fl oz
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Prepare the tartar sauce: in a bowl, mix vegetable oil, ketchup, Tabasco, and Worcestershire sauce.

Step 2

Before slicing the meat, you can freeze it slightly; this will make it easier to cut. Chop it into small cubes, about 5 mm on each side.

Step 3

Dice the gherkins and red onion into small cubes. Finely chop the parsley as well. Mix everything together, add the dressing, and let it marinate for 2–3 minutes at room temperature. Then season with salt and pepper to taste.

Step 4

Place the tartare on a plate. Make a small indentation and top it with an egg yolk. Season the yolk with black pepper and salt.
