Ingredients
- Cilantro - 5 bunches
- Chickpea - 8.8 oz
- Onion - 3.5 oz
- Parsley - 5 bunches
- Garlic - 5 cloves
- Toasted Cumin Seeds - 0.4 oz
- Natural Yogurt - 8.8 oz
- Tahini - 3 tablespoons
- Cucumbers - 2 pieces
Step by Step guide
Step 1
Soak the chickpeas for at least 8 hours, preferably 10. This way, they will absorb water and swell nicely. It's best to do this overnight.
Step 2
Wake up. Rinse the chickpeas with cold water and let them drain in a colander.
Step 3
Now, the chickpeas need to be minced. You can do this with a blender, food processor, or meat grinder. The last option is even more convenient.
Step 4
Then add the minced onion, 3 finely chopped cloves of garlic, 3 bunches each of parsley and cilantro, cumin, and tahini to the chickpeas. Season with salt and pepper to taste.
Step 5
Roll the mixture into balls and fry them in hot oil until they turn brown.
Step 6
For the tzatziki sauce, finely chop two cucumbers, garlic, parsley, and cilantro, and mix them into the yogurt. Season with salt and pepper to taste.
