Ingredients
- Cucumbers - 2 pieces
- Pide bread - 4 pieces
- Garlic - 1 clove
- Meyer Lemon Juice - 2 tablespoons
- Olive Oil - 5 tablespoons
- Scallions - 4 stalks
- Tomatoes - 4 pieces
- Orange Bell Peppers - 2 pieces
- Italian chopped parsley - 5.3 oz
- Fresh Mint - 0.2 oz
- Fresh basil leaves - 0.4 oz
- Halloumi Cheese - 2 lbs
Step by Step guide
Step 1
Preheat the grill. Peel the cucumbers and cut them lengthwise into four parts. Cut each part into thick pieces. Place in a sieve and sprinkle with salt to remove excess moisture.
Step 2
Cut each pita in half and grill on both sides. Once the bread is crispy, break it into small pieces.
Step 3
Mix the minced garlic clove, lemon juice, and 4 tablespoons of oil. Stir well.
Step 4
Rinse the cucumbers thoroughly and drain the water.
Step 5
In a bowl, combine the cucumbers, diced tomatoes, chopped peppers, chopped onions, parsley, oregano, and mint. Drizzle with the dressing and mix well.
Step 6
Cut the cheese into 8 pieces. Heat the remaining oil in a skillet and fry the cheese on both sides until browned. Scatter the pita pieces over the salad and lightly mix.
Step 7
Serve the fattoush topped with a piece of cheese.
