Fermented Brussels Sprouts
Ingredients
- Brussels Sprouts - 15.9 oz
- Dill - 2.5 oz
- Black peppercorns - 2 tablespoons
- Garlic - 4 cloves
- Dried chili peppers - 3 pieces
- Coarse Salt - 4.2 oz
Step by Step guide
Step 1
Place the Brussels sprouts, dill, pepper, garlic, and chili in a 2-liter jar and set aside.
Step 2
Mix the salt with 4 1⁄2 cups of water in a bowl until the salt is almost completely dissolved. Pour 3 cups of the prepared brine into the jar, and pour the remaining brine into a ziplock plastic bag, placing it on top of the contents of the jar.
Step 3
Wrap the jar in a large kitchen towel and let it sit at room temperature (20—23˚C) for 3—4 weeks. When the sprouts are ready, seal the jar with a lid and store it in the refrigerator for no more than 2 months.
