Ingredients
- White Cabbage - 2 lbs
- Water - 1 qt
- Nut Bread - 1 piece
- Ground Caraway - 0.2 oz
- Star anise - 0.2 oz
- Salt - 1.1 oz
- Vegetable Oil - to taste
- Dried cranberries with sugar - to taste
- Fresh-frozen lingonberry - to taste
Step by Step guide
Step 1
Remove the outer leaves from the cabbage, wash it, dry it, and cut it into four parts.
Step 2
Place the cabbage in an enameled container, add star anise and caraway seeds, pour boiling salted water over it, and press down with a small weight.
Step 3
When the brine cools, add a piece of black bread to the cabbage and leave it in a warm place for 3–4 days.
Step 4
Once the cabbage is fermented, remove it from the brine and transfer it to another container.
Step 5
Before serving, drizzle with vegetable oil and place cranberries or pickled lingonberries on the side.
