Fermented cabbage with carrots

Ingredients

  • White Cabbage - 13 lbs
  • Carrots - 4 pieces
  • Water - 6 qt
  • Coarse Salt - 6 tablespoons
  • Sugar - 4 tablespoons

Step by Step guide

Step 1

You will need three 3-liter jars for preparation.

Step 2

Filter the water or cool boiled water and dissolve the salt in it.

Step 3

Finely shred the cabbage and grate the carrots on a coarse grater.

Step 4

In the washed clean jars, loosely pack the cabbage with the carrots.

Step 5

Pour cold brine over it and leave to ferment at room temperature for 1 day. Keep the jars open.

Step 6

The cabbage should start to 'ferment', meaning it will foam and bubble. After this, you need to pierce it twice a day or more often until this process is complete, meaning the foam stops forming on the surface and the bubbles disappear. This will take about 5–7 days, depending on the temperature in the room where the cabbage is stored.

Step 7

When the cabbage has finished fermenting, drain the brine from all the jars into a separate container, and tightly pack the cabbage from the third jar into the first two.

Step 8

Pour the brine back over it—the cabbage should be completely covered—and add 2 tablespoons of sugar to each jar. Pierce the cabbage again to help the sugar settle to the bottom.

Step 9

Close the jars with lids and place them in the refrigerator for 2 days. After this time, the cabbage will be ready.
