Fermented Red Cabbage

Ingredients

  • Red Currant - 4 lbs
  • Chicken Broth - 528 qt
  • Apple Cider Vinegar - 1 fl oz
  • Sugar - 0.9 oz
  • Salt - 0.5 oz
  • Bay leaf - 1 piece
  • Allspice berries - 3 pieces
  • Unrefined Sunflower Oil - to taste

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Add vinegar, salt, sugar, bay leaf, and allspice to the broth.

Step 3

Boil the brine and let it cool completely.

Step 4

Finely shred the cabbage.

Step 5

Transfer the cabbage to an enameled, ceramic, or glass container.

Step 6

Pour the brine over the cabbage and knead it well with your hands to release the juice.

Step 7

Place a weight on top and refrigerate for 2 weeks.

Step 8

The longer the cabbage sits, the tastier it will become.

Step 9

Serve the fermented red cabbage drizzled with aromatic sunflower oil.
