Ingredients
- Turnips - 4½ pieces
- Olive Oil - to taste
- Butter - 2.6 oz
- Bay leaf - 1 piece
- Honey - 2 tablespoons
- Milk - 7 fl oz
- Chicken Broth - 17 fl oz
- Dried Chinese mushrooms - 2 pieces
- Chervil - to taste
Step by Step guide
Step 1
Cut 4 turnips into small pieces and sauté in a mixture of olive oil and butter with a pinch of salt and the bay leaf until the turnip becomes translucent.
Step 2
Add honey and cook for 1 minute.
Step 3
Add milk and broth and simmer for about 20 minutes until the turnip is soft.
Step 4
Remove the bay leaf.
Step 5
Blend the mixture into a puree and strain through a sieve if necessary. Add spices if needed.
Step 6
Add more broth if the soup is too thick.
Step 7
Cut the remaining turnip into small cubes and sauté in a small amount of butter and honey with finely chopped morels.
Step 8
Serve the soup in small coffee cups, placing the turnip with mushrooms in the center and a sprig of chervil on top.
