Finnish Cabbage Soup

Ingredients

  • Lamb - 17.6 oz
  • Fatback - 1.8 oz
  • White Cabbage - 10.6 oz
  • Onion - 1 head
  • Salad Potatoes - 2 pieces
  • Garlic - 1 clove
  • Semi-Smoked Sausage - 1.8 oz
  • Sour Cream - 3.5 oz
  • Salt - to taste
  • Vegetable Oil - 2 tablespoons
  • Bay leaf - 4 pieces
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F. Rinse the cabbage, dry it, and finely shred it. Cut the fatback into thin slices. Grease a wide frying pan with vegetable oil, layer the cabbage in a 1–1.5 cm thick layer, place pieces of fatback on top, and lightly salt and pepper. Cover the pan with a lid, place it in the oven, and simmer the cabbage until half-cooked (about 10–15 minutes).

Step 2

While the cabbage is cooking, rinse the lamb and cut it into small pieces, lightly salt and pepper it. Peel and finely chop the onion. In a small amount of vegetable oil, lightly fry the lamb, then add the onion to the pan and sauté for 5–7 minutes, stirring.

Step 3

Place the cabbage, lamb, and onion into a pot with 2 liters of water, bring to a boil, reduce the heat, and cook until the meat is tender, almost without boiling the soup.

Step 4

Rinse the potatoes, peel them, and cut them into small cubes. Peel and mince the garlic. Slice the sausage thinly. Add the potatoes, sausage, and garlic to the pot with the soup, salt, season with spices to taste, and cook until ready.

Step 5

In the pot, add the cut pieces of lamb; if it is lean, add some fat. Sauté, then add the chopped onion, water, prepared cabbage, and simmer. When the meat is almost ready, add the diced potatoes and sausage, along with the minced garlic to the soup.

Step 6

Serve the soup by ladling it into bowls and adding a tablespoon of sour cream to each.
