Finnish Cucumbers

Ingredients

  • Cucumbers - 4 lbs
  • Water - 2 qt
  • Salt - 3.5 oz
  • Sugar - 7.1 oz
  • Green peppercorns - ½ teaspoon
  • Spices - ½ teaspoon
  • Bay leaf - 5 pieces
  • Dijon Mustard - 2 tablespoons
  • 9% Vinegar - 7 fl oz

Step by Step guide

Step 1

Take 2 kg of cucumbers. Cut off the ends and slice them into rounds; halve the small ones and cut the larger ones into three to four pieces. You can leave them whole, but it's easier to pack sliced cucumbers into jars, and you can fit more.

Step 2

Bring the marinade (all ingredients except cucumbers) to a boil.

Step 3

Add the cucumbers to the marinade.

Step 4

When the cucumbers change color, cook for an additional 3 minutes to make 'cucumber soup.'

Step 5

Distribute into sterilized jars.
