Description
Finnish Fish Soup "Creamy Lake"
Ingredients
- Smoked haddock fillet - 21.2 oz
- Cream 22% - 1 qt
- Tomatoes - 7.1 oz
- Potato - 14.1 oz
- Leek - 7.1 oz
- Carrot - 7.1 oz
- Bay leaf - to taste
- Salt - to taste
- Butter - 3.5 oz
- White Pepper (whole) - to taste
- Water - 10 fl oz
Step by Step guide
Step 1
Chop the onion and carrot into thin strips and sauté them in butter (in a soup pot). Add the diced potatoes and cook the vegetables until they are partially tender. Pour water over the vegetables. Bring to a boil.
Step 2
Add the diced salmon fillet to the boiling vegetables.
Step 3
Peel the tomatoes, remove the seeds, and dice them before adding to the soup. Cook for 1 minute. Pour in the cream — this will give the dish an incredibly delicate, refined flavor and a creamy texture. Add spices and a bay leaf. Simmer on low heat until fully cooked.
Step 4
When serving, sprinkle the soup with chopped herbs and garnish the dish with a piece of rye bread spread with butter, which will perfectly complement the creamy flavor of the dish.
