Ingredients
- Fish Trimmings - 20 oz
- Salad Potatoes - 4 pieces
- Onion - 1 head
- Carrot - 1 piece
- Thyme - 0 oz
- Salt - to taste
- Bay leaf - 1 piece
- Green peppercorns - to taste
- 10% cream - 5 fl oz
- Safflower Oil - 0 fl oz
- Butter - 0 oz
Step by Step guide
Step 1
Prepare the fish trimmings.
Step 2
Boil the trimmings until cooked (about 15–20 minutes), seasoning the broth to taste.
Step 3
Chop the onion into medium cubes.
Step 4
Cut the potatoes into large pieces.
Step 5
Grate the carrot on a coarse grater.
Step 6
Take a pot with a thick bottom and pour in the sunflower oil.

Melt the butter.
Step 8
Sauté the onion in the pot until golden.

Add the carrot and stir.

Next, add the chopped potatoes.

Strain the cooked fish broth.

Pour the broth into the vegetables.

Add the bay leaf and cook until the potatoes are done, about 15 minutes.

Meanwhile, remove pieces of meat from the fish trimmings.
