Ingredients
- Sardines - 2 lbs
- Miso Paste - 5 tablespoons
- Dry White Wine - 3 fl oz
- Sugar - 1 teaspoon
- Chicken Egg - 1 piece
- Corn Flour for Polenta - 2 tablespoons
- Shimeji mushrooms - 3.5 oz
- Tuna - 0.7 oz
- Soy Sauce - 2 tablespoons
- Dark red seaweed - 1.8 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Leek - 7.1 oz
Step by Step guide
Step 1
To prepare the fish balls, clean the sardines from bones, chop them, and mix with the egg and corn flour. Add the wine, salt, and sugar. Form into balls.
Step 2
To prepare the broth, soak the seaweed in cold water, bring to a boil, and cook for 3 minutes. Add the miso paste, bonito flakes, soy sauce, salt, and pepper.
Step 3
Drop the fish balls into the broth and cook for 10 minutes.
Step 4
Slice the shiitake mushrooms thinly. Add to the broth. Cook for 5 minutes.
Step 5
Chop the leek. Add to the soup and cook for 5 minutes.
