Ingredients
- Fish - 2 lbs
- Onion - 1 head
- Bay leaf - 1 piece
- Green peppercorns - 5 pieces
- Mayonnaise - 7.1 oz
- Gelatin - 2 teaspoons
- Carrot - to taste
- Parsley - to taste
- Celery salt - ½ piece
- Salt - to taste
- Lemon - to taste
- Herbs - to taste
Step by Step guide
Step 1
Prepare the fish by gutting it and cutting it into medium-sized pieces (approximately 50 grams), then salt them.
Step 2
Place the heads and fins in a pot, cover with cold water, bring to a boil, skim off the foam, add salt, roots, and spices.
Step 3
Cook for at least 1–1.5 hours to reduce the liquid by half.
Step 4
Place the prepared fish pieces in a saucepan, pour in the strained broth (up to half the volume of the fish), and cook covered.
Step 5
After about 15 minutes, carefully transfer the cooked fish to a serving dish.
Step 6
In the broth, add the previously soaked gelatin and bring to a boil.
Step 7
Cool to room temperature, add mayonnaise, whip until foam appears on the surface, then pour this sauce over the fish and refrigerate.
Step 8
Garnish with lemon slices and herbs.
