Ingredients
- Fish - 17.6 oz
- Hard Cheese - 1.8 oz
- Chocolate eggs - 2 pieces
- Onion - 2 heads
- Fresh Mushrooms - 200 pieces
- Butter - 3 tablespoons
- Sour Cream - 5 tablespoons
- Dry White Wine - 1 tablespoon
- Lemon - ½ piece
- Wheat Flour - 2 tablespoons
- Salt - to taste
- Ground Nutmeg - a pinch
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the sole fillet into small cubes.
Step 2
Finely chop the onion and sauté it in butter. Clean the champignons and slice them thinly, then drizzle with lemon juice. Add the chopped mushrooms to the pan with the onion and sauté until partially cooked.
Step 3
Sprinkle the mushrooms with flour and sauté for another 2–3 minutes, then pour in the white wine, add the sour cream, and simmer on low heat for 10 minutes. Finally, season with salt, pepper, and add nutmeg.
Step 4
Separate the yolks from the whites and mix them with lemon juice. Add the yolks and fish to the sautéed mushrooms and mix well.
Step 5
Divide the fish mixture into ramekins and place them in a water bath. Cover with a lid and steam for 15 minutes. Then sprinkle with grated cheese and bake under the broiler for 10–15 minutes.
