Fish Mousse in Lemon Cups
Ingredients
- Gelatin - 0.4 oz
- Dry White Wine - 1 fl oz
- Onion - 1 head
- Butter - 1.1 oz
- Meyer Lemon Juice - 1 fl oz
- Chopped Sage Leaves - 1.4 oz
- Citrus Zest Mix - 0.2 oz
- Canned tuna in its own juice - 8.8 oz
- Chicken Broth - 7 fl oz
- Spices - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Cream - 7 fl oz
- Mayonnaise - 1.8 oz
- Cayenne Pepper - to taste
- Lemon - 6 pieces
Step by Step guide
Step 1
Pour gelatin into the white wine and let it dissolve completely.
Step 2
Sauté finely chopped onion in butter until soft.
Step 3
Add the gelatin mixture, lemon juice, lemon zest, chopped parsley, and chicken broth to the onion. Cook over low heat until the gelatin is completely dissolved.
Step 4
Mix with canned tuna until smooth. Add freshly ground pepper and salt.
Step 5
Then add whipped cream, mayonnaise, and cayenne pepper.
Step 6
Cover and let cool.
Step 7
Cut the lemons in half and remove all the insides.
Step 8
Fill the lemon cups with the fish mousse. Serve with boiled eggs, cream, and caviar.
