Description
This soup can be made from carp, smelt, navaga, cod, pike perch, salmon, and other fish.
Ingredients
- Fish - 26.5 oz
- Wheat Flour - 2 tablespoons
- Butter - 4 tablespoons
- Milk - 16 fl oz
- Carrot - 1 piece
- Parsley - 1 piece
- Onion - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Clean the fish, rinse it, and separate the meat from the bones; boil the bones with the roots and onion to make broth. Cut the fish fillet into pieces and sauté it with butter and finely chopped onion.
Step 2
In a pot, lightly fry 2 tablespoons of flour with 2 tablespoons of butter, dilute with 4 cups of fish broth, bring to a boil, add the prepared fish, and cook for 15-20 minutes.
Step 3
After cooking, strain the soup and pass it through a sieve, dilute with hot milk, add salt to taste, and finish with butter; optionally, add egg yolks mixed with milk.
Step 4
The soup can be served with pieces of fish or meatballs. Serve croutons separately.
