Description
For making solyanka, you can use any fresh fish, but not small or very bony ones. A good solyanka is made from red fish (sturgeon, beluga, sterlet). Fresh tomatoes can be replaced with 2 tablespoons of tomato puree.
Ingredients
- Fish - 17.6 oz
- Pickles - 5 pieces
- Onion - 2 pieces
- Tomatoes - 3 pieces
- Capers - 1 tablespoon
- Olives stuffed with lemon - 1 tablespoon
- Bay leaf - 2 pieces
- Vegetable Oil - 2 tablespoons
- Green peppercorns - to taste
- Salt - to taste
- Lemon - ¼ piece
- Parsley - to taste
- Dill - to taste
Step by Step guide
Step 1
Cut the filleted fish into pieces, 2-3 pieces per serving, and make broth from the bones and heads.
Step 2
Finely chop the peeled onion and lightly sauté it in a soup pot with oil, add tomato puree and simmer for 5-6 minutes, then add the fish pieces, sliced pickles, chopped tomatoes, capers, bay leaves, a bit of pepper, and pour in the prepared hot broth, season with salt, and cook for 10-15 minutes.
Step 3
Before serving, you can add washed olives and finely chopped parsley or dill to the solyanka. You can also add slices of lemon, peeled.
