Fish Soup with Fennel
Ingredients
- Cod fillet - 17.6 oz
- Onion - 1 piece
- Garlic - 3 cloves
- Fennel - 1 head
- Baking Tomatoes - 14.8 oz
- Fish Oil - 17 fl oz
- Pesto - 1 tablespoon
- Grated Pecorino Pepato Cheese - 1.8 oz
Step by Step guide
Step 1
Finely chop the onion and garlic. Slice the fennel thinly. Sauté the fennel, onion, and garlic in a pot.
Step 2
Add the crushed canned tomatoes and fish broth to the pot, and cook for 5 minutes.
Step 3
Cut the cod fillet into cubes and add it to the pot, cooking for another 3 minutes, then stir in 1 tablespoon of pesto.
Step 4
Add salt and pepper to taste.
Step 5
Serve with croutons, sprinkled with grated Parmesan.
