Ingredients
- Onion - 1 head
- Dry White Wine - 5 tablespoons
- Bay leaf - 1 piece
- Olive Oil - 3 tablespoons
- White fish - 24.7 oz
- Wheat Flour - 2 tablespoons
- Passata Tomato Sauce - 1 tablespoon
- Saffron - a pinch
- Garlic - ½ clove
- Udon Noodles - 4.2 oz
- Salt - to taste
Step by Step guide
Step 1
Remove the gills from the fish head. Cut a thick slice from the onion and finely chop the rest. Pour 2 liters of water into a large pot, add the wine, the onion slice, bay leaf, and a pinch of salt. Add the fish backbone and head. Bring to a boil, reduce the heat, and simmer for 10 minutes. Remove the pot from heat and strain the broth through a sieve into another container.
Step 2
Heat the oil in a pot, add the chopped onion, and cook over low heat, stirring, for 8 minutes. Then stir in the flour and cook for another 2-4 minutes until it starts to darken. Stir in the tomato paste and pour in the fish broth.
Step 3
In a mortar, crush the saffron with the garlic, add a little broth, and send everything into the pot with the soup. Bring to a boil, reduce the heat, and simmer for 15 minutes.
Step 4
Strain the soup through a sieve into another pot, add the noodles, and cook for another 15 minutes until they are soft. Serve immediately.
