Ingredients
- Star anise - 0 oz
- Dorado - 6.3 oz
- Smoked Salmon Flavored Croutons - 6.3 oz
- Squid - 4.2 oz
- Dry White Wine - 1 fl oz
- Fish Oil - 37 fl oz
- Leek - 2.5 oz
- Tomatoes - 3.2 oz
- Baking Tomatoes - 6.3 oz
- Olive Oil - 1 fl oz
- Garlic - 0.2 oz
- Olives stuffed with lemon - 1.1 oz
- Thyme - 0.2 oz
- Tarragon - 0.2 oz
- Saffron - a pinch
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the leek, rinse under water, and keep only the white part for further preparation.
Step 2
Chop the garlic and canned tomatoes.
Step 3
Wash the tarragon and thyme, separating the leaves from the stems.
Step 4
Prepare the broth.
Step 5
In olive oil, add the leek and garlic, stirring, gently pour in the white wine. Add the tomatoes and cook briefly.
Step 6
Add saffron, star anise, thyme sprigs, and tarragon to the broth. Simmer for 20-30 minutes over low heat. At the end of cooking, remove the tarragon sprigs.
Step 7
Blanch the fresh tomatoes, cool, and peel off the skins. Cut the flesh into 4 pieces and dice.
Step 8
Sauté the dorado, salmon, and squid in olive oil, add the broth, olives, diced tomatoes, salt, and pepper. Garnish the dish with chopped tarragon and thyme leaves before serving.
