Fish Soup with Salted Cod
Ingredients
- Lightly Salted Red Fish - 3.5 oz
- Olive Oil - 5 tablespoons
- Onion - 1 piece
- Tomatoes - 17.6 oz
- Blue Ling Fillet - 17.6 oz
- Bay leaf - 1 piece
- White bread - 3.5 oz
- Shrimp - 17.6 oz
- Paprika - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the cod in a bowl of water and leave for several hours, changing the water.
Step 2
Finely chop the onion and tomatoes. Heat the oil in a pot, add the onion, and cook over low heat, stirring, for 6–8 minutes until golden brown. Add the tomatoes and cook for another 15 minutes, crushing the tomatoes with a spatula. Allow the mixture to cool slightly, then blend it in a blender, transfer to a bowl, and set aside.
Step 3
Place the fish fillet (various types of fish can be used) and unpeeled shrimp in a pot, cover with water, add the bay leaf and a pinch of salt. Bring to a boil over high heat, cook for 1 minute, then remove the pot from the heat. Remove the fish and place it on a plate. Discard the bay leaf.
Step 4
Tear the bread into pieces, place it in a bowl, pour the broth over it, and let it sit.
Step 5
Pat the cod dry. Remove the skin and bones from the cod and fish fillet. Quickly blend all the fish with the bread in a blender, ensuring that some crumbs remain.
Step 6
Remove the shrimp from the broth, discard the heads and shells. Blend the shrimp with a small amount of broth as well.
Step 7
Add the tomato-onion mixture to a large pot, add the paprika, and cook, stirring, for 2 minutes. In the same pot, add the fish with bread and the shrimp paste. Pour in 1.5–2 liters of broth. Season with salt and pepper to taste and cook for 5–10 minutes. Serve in a soup tureen.
