Fish soup with shrimp dumplings

Ingredients

  • Swordfish - 1 piece
  • Onion - 1 head
  • Carrot - 1 piece
  • Grated Ginger Root - 1 piece
  • Soy Sauce - 3 tablespoons
  • Ground clove - 3 pieces
  • Vegetable Oil - 1 fl oz
  • Scallions - 1 bunch
  • Dill - ½ bunch
  • Shrimp - 21.2 oz
  • Lemon - 1 piece
  • Chicken Egg - 1 piece
  • Milk - 5 fl oz
  • Wheat Flour - 14.1 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Clean the fish from scales and entrails, remove the gills.

Step 2

Cut the fish into pieces.

Step 3

Pour water over the head, tail, and fins. Add the peeled onion, carrot, chopped ginger root, and cloves.

Step 4

Bring to a boil over low heat, skimming off the foam.

Step 5

Strain the broth, removing the head, tail, and fins.

Step 6

Heat vegetable oil in a skillet.

Step 7

Sauté finely chopped garlic for half a minute. Add 2 tablespoons of soy sauce.

Step 8

Once the sauce boils, add the fish, cut into pieces and deboned. Fry on both sides for two minutes.

Step 9

Remove from heat and let it soak in the soy-garlic sauce.

Step 10

Make dumpling dough from the egg, water (milk), salt, and flour. Let the dough rest.

Step 11

Pour boiling water over the shrimp for 2 minutes. Drain the water. Peel the shrimp from the heads and shells (keep the heads and shells, they will be useful for the fish broth). Cut the peeled shrimp into pieces.

Step 12

Add finely chopped green onion and dill, season with salt and pepper, add 1 teaspoon of lemon juice, and mix. Let it rest.

Step 13

Pour half of the strained fish broth over the shrimp heads and shells. Put on heat, bring to a boil, and simmer for 10-15 minutes on low heat.

Step 14

While the shrimp-fish broth is cooking, prepare the dumplings.

Step 15

Cut the dough into pieces, roll each piece in flour, roll out a circle, place a teaspoon of shrimp filling in the center, and pinch into a triangle.

Step 16

Bring the second half of the broth to a boil, add the dumplings, and cook until they float - until done.

Step 17

In a deep bowl, place the dumplings and pour over the finished shrimp-fish broth.

Step 18

On a separate plate, place pieces of fish with the sauce. Sprinkle with herbs and garnish with lemon wedges (or alternatively: in deep bowls, place dumplings, a piece of fish, pour over the broth, add lemon juice to taste, and sprinkle with herbs).
