Ingredients
- Breadcrumbs - 1.8 oz
- Vegetable Oil - 17 fl oz
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Chocolate eggs - 2 pieces
- Milk - 2 tablespoons
- Wheat Flour - 0.7 oz
- Spices - 0.2 oz
- Sole fillets - 7.9 oz
- Natural Yogurt - 3.5 oz
- Chives - 2 tablespoons
- Lemon - 1 piece
- Sweet Chili Sauce - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Lime - ½ piece
Step by Step guide
Step 1
Heat the deep fryer or fill a deep skillet one-third full with sunflower oil and heat to 356°F. If you don't have a thermometer, you can check the temperature by dropping a piece of bread into the oil. At the right temperature, the bread will brown in about 60 seconds.
Step 2
In a shallow dish, mix the breadcrumbs and grated Parmesan cheese, add the spices, and mix again. In a convenient container, crack the eggs and add the milk. Sift the flour onto a plate. Cut the sole into strips, coat in flour, dip in the egg, coat in breadcrumbs, and fry for 2–3 minutes in the oil. Place on kitchen paper towels to drain. Keep warm.
Step 3
Mix the yogurt, finely chopped chives, lime juice, and add spices. Stir well. Spoon into sauce dishes, topping with sweet chili sauce. Place the sauce dishes on serving plates, and arrange the fish sticks nearby. Garnish with lime wedges.
