Ingredients
- Potato - 14.1 oz
- Butter - 0.9 oz
- Whole egg - 4 pieces
- 10% cream - 3 fl oz
- Mussels - 10.6 oz
- Cod fillet - 10.6 oz
- Smoked haddock fillet - 10.6 oz
- Leek - 1 piece
- Carrot - 1 piece
- Onion - 1 head
- Fish Oil - 1 qt
- Dry White Wine - 3 fl oz
- Leek - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the vegetables, chop them, and roast in the oven at 220°C (428°F) with butter until they are soft but not mushy.
Step 2
Boil the mussels for 3–4 minutes in a pot of water. Clean the mussels, set them aside, and keep the water they were cooked in.
Step 3
In the fish stock, boil the fish for a few minutes. Remove the fish from the stock and set it aside. Add wine and the water used to cook the mussels to the stock. Place it over high heat and let the stock reduce by half.
Step 4
In a separate bowl, whisk together the egg yolks and cream. Pour the mixture into the broth, place it over medium heat, and cook until it thickens (without allowing it to boil). Arrange the fish in a deep plate, top it with vegetables, potatoes, and mussels, then ladle the broth over and garnish with onions.
