Ingredients

  • Ghee - 1.8 oz
  • Meyer Lemon Juice - 0 fl oz
  • Scallions - 1.8 oz
  • Sesame bun - 0.4 oz
  • Wheat Flour - 8.8 oz
  • Water - 5 fl oz
  • Onion - 5.3 oz
  • Carrot - 5.3 oz
  • Potato - 2.6 oz
  • Ginger - 0.2 oz
  • Baking Tomatoes - 0.9 oz
  • Curry - 2½ pieces
  • Soy Sauce - 0 fl oz
  • Chicken Broth - 5 fl oz
  • Sesame Oil - 0 fl oz
  • Olive Oil - to taste
  • Salt - 0.2 oz

Step by Step guide

Step 1

Mix the flour, warm water, and salt. Knead the dough and let it rest for 1 hour, then divide it into portions of 80 grams each.

Step 2

Roll out each portion of dough into a thin flatbread, brush each with melted butter, and sprinkle with green onions and sesame seeds.

Step 3

Roll the dough into a log shape and coil it into a spiral, then let it rest for 30 minutes. After that, press it down, roll it out again, and fry it in a skillet with clarified butter.

Step 4

Roughly chop the carrots, ginger, onion, and potatoes. Sauté all ingredients except the potatoes in a large pot with olive oil, then pour in chicken broth and add the potatoes.

Step 5

Cook the vegetables until tender, then add the tomatoes and curry cubes. Simmer for another 10 minutes, adjusting the taste with soy sauce and sesame oil. Season with salt and pepper to taste. Blend until smooth, then add fresh lemon juice.

Step 6

Serve the hot flatbreads with the sauce.
