Ingredients
- Corn Starch - 4 teaspoons
- Meyer Lemon Juice - 1 tablespoon
- Shallot - 1 piece
- Dry Champagne - 1¼ cups
- Gruyère cheese - 7.1 oz
- Brie cheese - 3 oz
- Emmental cheese - 4.9 oz
- Nutmeg - a pinch
- White Pepper (whole) - a pinch
- French Baguette - 1 piece
Step by Step guide
Step 1
In a small bowl, mix the cornstarch and lemon juice.
Step 2
In a fondue pot or a heavy-bottomed saucepan, combine the champagne and finely chopped shallot. Place over medium heat and warm for 2 minutes. Remove from heat and add all the grated cheese, with the brie cut into small pieces. Mix well. Then add the lemon juice with cornstarch.
Step 3
Return the pot to medium heat and warm until all the cheese is melted and the mixture starts to bubble, about 12 minutes. Add nutmeg and white pepper. Place on a fondue burner and keep warm.
Step 4
Tear the bread into small pieces and serve with the fondue.
