Description
In some recipes, leeks are added to the broth. They are placed in at the beginning of cooking along with the vegetables.
Ingredients
- Boneless pork shoulder - 35.3 oz
- Onion - 1 piece
- Carrot - 2 pieces
- Green peppercorns - to taste
- Bay leaf - 2 pieces
- Ground clove - 3 pieces
- Water - 3 qt
Step by Step guide
Step 1
Clean the beef from membranes, tendons, and cartilage, as they make the broth cloudy. Place the meat in cold water and put it on high heat.
Step 2
While the water is heating, wash the vegetables and peel the carrots. Remove the outer skin from the onion, cut off the root, but do not fully peel the onion. Insert the cloves into the onion.
Step 3
When the water is almost boiling, reduce the heat and start skimming off the foam with a spoon or skimmer. Do not leave the stove until the last foam is removed.
Step 4
When the foam stops forming, add the vegetables and pepper to the broth and simmer on low heat for 1 hour.
Step 5
After an hour, when the vegetables are completely soft, remove them along with the broth. Cook for another 30–40 minutes until the meat is tender.
Step 6
Shortly before the end of cooking, add salt and place the bay leaf. If the broth will be used in other dishes, it is better not to salt it. Salt can be added later.
Step 7
Strain the finished broth through several layers of cheesecloth to make it clear.
