Fragrant rice with poblano peppers and herbs
Ingredients
- Cilantro - 0.7 oz
- Vegetable Oil - 2 tablespoons
- Onion - 1 head
- Ground ancho chili pepper - 1 piece
- Chopped Green Onions - 1 tablespoon
- Parsley - 0.7 oz
- Chopped Sage Leaves - 1 tablespoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Rice - 1 cup
Step by Step guide
Step 1
In a saucepan over medium heat, heat 1 tablespoon of oil. Add finely chopped onion and the seeded and finely chopped poblano pepper. Sauté for about 4 minutes.
Step 2
Transfer the onion and pepper to a blender, add 2 cups of water and the cilantro and parsley leaves. Season with salt and pepper. Blend until smooth.
Step 3
In the same saucepan, heat the remaining oil and add the rice. Sauté lightly, stirring for a couple of minutes. Then stir in the puree, bring to a boil, cover, reduce heat, and cook for 15–17 minutes until the rice is done.
Step 4
Remove from heat and let sit for 5 minutes. Then fluff the rice with a fork and add the chopped parsley and cilantro.
