Description
Recipe by John Smith, chef at The Bistro. The dish is based on poutine, a national fast food dish from Quebec, consisting of French fries topped with fresh cheese curds and drizzled with a lightly sweetened gravy. It originated in Quebec in the 1950s, and by the 2000s, its popularity spread to other provinces and even countries (USA, France, Belgium). It is often served as a complement to breaded seafood and fish dishes. Spicy pepperoni and tomatoes with poutine are another classic combination.
Ingredients
- Potato - 2 pieces
- Vegetable Oil - 3 fl oz
- Passata Tomato Sauce - 3.5 oz
- Melted Cheese - 4.2 oz
- Garlic - 1 clove
- Pepperoni - 1.1 oz
- Parmesan Cheese - 0.4 oz
- Basil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the potatoes and cut them into standard matchstick shapes, like for French fries. Rinse them under cold running water to wash away the starch.
Step 2
Dry the chopped potatoes with paper or cloth towels.
Step 3
Heat a frying pan with vegetable oil for deep frying.
Step 4
Carefully lower the cut potatoes into the heated oil in batches. Do not throw them in; act with extreme caution to avoid getting burned by the splashes.
Step 5
When a golden crust appears, flip the potatoes with a slotted spoon. Fry the potatoes for a total of about 3 minutes until they have a uniform golden crust and a tender center.
Step 6
Finely chop the mozzarella. In a separate pan, heat the tomato sauce and mix it with the chopped mozzarella.
Step 7
Mince the garlic, heat it in vegetable oil, and quickly sauté the thinly sliced pepperoni sausages in the garlic oil.
Step 8
Arrange the French fries on a plate and drizzle with hot tomato sauce topped with mozzarella. Place the sausages on top, then sprinkle with grated Parmesan and fresh basil.
