French Mushroom Cream Soup

Ingredients

  • Pickled Chanterelles - 10.6 oz
  • Onion - 2.8 oz
  • Chicken Broth - 13 fl oz
  • Butter - 0.7 oz
  • Truffle Oil - 2 tablespoons
  • Ground Black Pepper - ½ teaspoon
  • Cognac - 1 fl oz
  • 33% Cream - 5 fl oz
  • Ocean salt - to taste
  • Nutmeg - to taste

Chop the onion and mushrooms into small pieces.

In a deep skillet, heat the truffle oil and butter.

Add the mushrooms and onion to the hot oil.

After 2–3 minutes, stir and reduce the heat to medium.

Season with black pepper.

After 2 minutes, stir again and cover with a lid. Reduce the heat a bit more.

After 5 minutes, pour in the cognac and stir.

Transfer the mushrooms to a pot and pour in the broth. Heat to about 158°F, then remove from heat.
