- Onion - 5 pieces
- Butter - 1.8 oz
- Vegetable Oil - 3 tablespoons
- Thyme - 2 pieces
- Garlic - 5 cloves
- Red Grape Juice - 17 fl oz
- Chicken Broth - 1 qt
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 1.4 oz
- Croutons - to taste
Step by Step guide
Step 1
Cut the onions in half, place them cut side down, and slice into thin half-rings (no thicker than 5 mm). Heat the butter and vegetable oil in a large skillet. Add the onions, thyme, season with salt and pepper, and sauté over medium heat, adding the garlic. Cover and cook over moderate heat for 15–20 minutes, stirring frequently.
Step 2
Pour in the wine, increase the heat, and let the wine evaporate. Add the broth, bring to a boil, skim off any fat and foam that may appear. Simmer on low heat for 45–60 minutes, uncovered, skimming off foam as necessary.
Step 3
Taste the broth and adjust seasoning if needed, then ladle into warmed bowls. Distribute the onions among the bowls, sprinkle with parsley, and top with cheese croutons.
