French Onion Soup with Thyme and Garlic Cheese Croutons
Ingredients
- Butter - 1.8 oz
- Onion - 2 lbs
- Thyme - 0.5 oz
- Medium-dry sherry - 3 tablespoons
- Campbell's Beef Broth - 1 qt
- Garlic - 2 cloves
- French Baguette - 1 piece
- Olive Oil - to taste
- Gruyère cheese - 3.5 oz
Step by Step guide
Step 1
Melt the butter in a pot and sauté the sliced onions and thyme over low heat until soft, about 20 minutes.
Step 2
Increase the heat and caramelize the onions for another 15 minutes until they are dark golden brown, stirring occasionally.
Step 3
Pour in the sherry and cook for another 2-3 minutes, then add the broth, season with salt and pepper, bring to a boil, reduce the heat, and simmer for 10 minutes.
Step 4
Meanwhile, toast the sliced baguette on both sides until golden. Rub both sides with the garlic cloves. Drizzle with olive oil and sprinkle with grated cheese. Place on a baking sheet and put under the broiler for a few minutes until the cheese melts.
Step 5
Serve the soup with hot croutons.
