French Salmon Pâté
Ingredients
- Celery stalk - 1 piece
- Onion - 1 head
- Leek - 1 piece
- Green peppercorns - 1 teaspoon
- Bay leaf - 1 piece
- Dry White Wine - 1 cup
- Lemon - 1 piece
- Smoked haddock fillet - 6 oz
- Crème fraîche - 2.1 oz
- Chives - 2 tablespoons
- Olives stuffed with lemon - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Bring a large pot of water to a boil. Add thinly sliced celery, thinly sliced onion, thinly sliced leek, black peppercorns, bay leaf, wine, and halved lemon. Cook for 25 minutes.
Step 2
Add the fish, cover with a lid, and remove from heat. Let sit for 10 minutes. Remove the fish from the broth and cool in the refrigerator.
Step 3
In a blender, blend the fish, crème fraîche, finely chopped chives, and lemon olive oil. Season with salt and pepper. Chill before serving.
