French Sorrel
Ingredients
- Salt - to taste
- Whole egg - 2 pieces
- Milk - 17 fl oz
- Wheat Flour - 1 tablespoon
- Butter - 1.8 oz
- Sorrel - 4 lbs
Step by Step guide
Step 1
Remove the stems and rinse the sorrel leaves. Pour 3-4 liters of water into a large pot and add 1 tablespoon of salt. Add the sorrel to the pot, bring to a boil over high heat, and cook for 10 minutes. Drain the water. Finely chop the leaves.
Step 2
Melt the butter in the pot, add the flour, and cook, stirring, for 2 minutes. Slowly pour in the milk while stirring, and cook for another 4 minutes. Season with salt and add the sorrel. Mix well, cover, and simmer on low heat for 10 minutes.
Step 3
Lightly beat the yolks, pour in a little liquid from the pot – but slowly, to avoid lumps. Then stir this mixture into the sorrel. Season to taste and serve as a side dish with eggs or meat.
