Ingredients
- Farm fresh eggs - 4 pieces
- Milk - 12 fl oz
- Grated Ginger Root - 0 fl oz
- Vanilla extract - 0 fl oz
- Sugar - 0 fl oz
- Salt - a pinch
- Butter - to taste
- Maple syrup - to taste
- Toasts - 8 slices
- Fresh Berries - 7.9 oz
- Curd - 4 fl oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a bowl, mix the eggs, lightly beaten, milk, ginger, vanilla, sugar, and salt.
Step 3
Spread lemon curd on 4 slices of bread and top with blueberries. Cover with the remaining slices of bread and press down gently.
Step 4
Melt a small amount of butter in a skillet. Dip the sandwiches in the egg-milk mixture and place them in the skillet. Fry until golden brown, about 2-3 minutes on each side, adding more butter as needed.

Transfer to a baking sheet and place in the oven for 8-10 minutes.

Meanwhile, melt 60 ml of butter in a skillet. Cook until the butter turns brown, about 5 minutes.
