French Toast with Blueberry-Lemon Filling

Ingredients

  • Farm fresh eggs - 4 pieces
  • Milk - 12 fl oz
  • Grated Ginger Root - 0 fl oz
  • Vanilla extract - 0 fl oz
  • Sugar - 0 fl oz
  • Salt - a pinch
  • Butter - to taste
  • Maple syrup - to taste
  • Toasts - 8 slices
  • Fresh Berries - 7.9 oz
  • Curd - 4 fl oz
  • Powdered Sugar - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

In a bowl, mix the eggs, lightly beaten, milk, ginger, vanilla, sugar, and salt.

Step 3

Spread lemon curd on 4 slices of bread and top with blueberries. Cover with the remaining slices of bread and press down gently.

Step 4

Melt a small amount of butter in a skillet. Dip the sandwiches in the egg-milk mixture and place them in the skillet. Fry until golden brown, about 2-3 minutes on each side, adding more butter as needed.

Step 5

Transfer to a baking sheet and place in the oven for 8-10 minutes.

Step 6

Meanwhile, melt 60 ml of butter in a skillet. Cook until the butter turns brown, about 5 minutes.

Step 7

Transfer the sandwiches to a plate and drizzle with brown butter and maple syrup. Lightly dust with powdered sugar and serve.
