Description

You can use fresh-frozen peas, thawing them to room temperature. In winter, it is better to use warm water. Peas are valued mainly for their high protein content. The protein in peas is almost as much as in beef. However, unlike meat protein, it is much easier to digest. Peas are rich in carbohydrates and trace elements. Green peas contain B vitamins, carotene (provitamin A), vitamins C and PP. Peas include salts of potassium, manganese, iron, and phosphorus. Green peas are a source of one of the deficient amino acids – lysine. Peas are present in any therapeutic diet and should definitely be included in the diet of cardiovascular patients.

Ingredients

  • Pea shoots - 3.5 oz
  • Carrot - ⅓ piece
  • Celery stalk - 1 piece
  • Onion - 0.2 heads
  • Olive Oil - 1 tablespoon
  • Water - 1 cup
  • Ocean salt - a pinch
  • Meyer Lemon Juice - 1 tablespoon
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

In a blender, combine young peas, finely chopped carrot, chopped celery stalk, onion, olive oil, lemon juice, and water.

Step 2

Blend until smooth for at least 2 minutes.

Step 3

Add salt and pepper to taste. Blend again for about 10 seconds.

Step 4

Serve immediately, garnished with fresh vegetables and herbs.
