Step 1
Buy the largest and most colorful peppers. One should be red, another orange, and the third green. This way, you get a rainbow of colors. The recipe is based on 5 raw peppers, which is quite a lot and can feed many guests.
Step 2
Cook the rice. Use round rice as it is stickier and blends better with the cheese mixture. It will double in volume. The ratio of cheese to rice can be adjusted. If you're not being frugal, you can make 2/3 of the stuffing from cheese.
Step 3
Boil the eggs hard and peel them. Chop the herbs very finely.
Step 4
Wash the raw peppers, cut off the tops, and clean out the insides.
Step 5
Grate the cheese and mix it with the eggs, herbs, and rice. Add salt to taste, but don't overdo it since the cheese is already salty. Use hard cheese that is dark yellow in color.
Step 6
Now stuff half of the peppers with the filling. Place the filling along the walls of the pepper. Add an egg and fill the remaining spaces with the stuffing.
Step 7
Place the raw stuffed peppers in the refrigerator for 30 minutes. Put them on a shelf with a higher temperature.
Step 8
Remove the peppers from the refrigerator and slice them into rounds with a very sharp knife. Decorate according to your taste and preference.
