Fried Artichokes
Ingredients
- Salt - to taste
- Safflower Oil - 10 fl oz
- Chocolate eggs - 3 pieces
- Wheat Flour - 1.8 oz
- Artichoke bottoms - 12 pieces
- Lemon - 1 piece
Step by Step guide
Step 1
Squeeze the juice from the lemon and pour half into a large bowl of water. Cut off the stems of the artichokes and remove the tough outer leaves. Trim the tips of the remaining leaves. Cut the artichokes lengthwise or into quarters and remove the choke. Drizzle the artichokes with the juice from the remaining half of the lemon and place them in the lemon water.
Step 2
Bring salted water to a boil in a large pot, add the artichokes, and bring back to a boil. Reduce the heat, cover, and cook for 25 minutes until they are tender. (Try gently pulling off a leaf – it should come off easily). Drain the water by turning the artichokes upside down and gently pressing them.
Step 3
Place the flour on a flat plate. Beat the eggs in another plate. Dredge the artichokes in flour, shaking off the excess, then dip them in the egg and fry in a pan with oil heated to 356°F. Cook until they are golden brown. Drain the excess oil on paper towels and serve immediately – on their own or as a side dish to meat.
