Ingredients
- Salt - to taste
- Wheat Flour - 2.8 oz
- Chocolate eggs - 2 pieces
- Safflower Oil - 10 fl oz
- Mustard Greens - 3 lbs

Step 1
Cut the stems off the beet greens and chop them into pieces about 2.5 cm long. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 35 minutes until they are soft. Drain the water.
Step 2
Heat the oil in a pan to 356°F. Dredge each piece in flour and then in beaten eggs. Carefully place them in the hot oil and fry until golden brown. Drain excess oil on a paper towel and serve immediately.
